How to Make Pumpkin-Shaped Gnocchi (as seen on Pinterest)
This recipe has become a Pinterest sensation over the past few years, and I’ve always wanted to try it myself. It’s simple, charming, and absolutely perfect for anyone who loves a touch of cottagecore magic in their meals.
Though I couldn’t track down the original creator, this recipe is everywhere online, so feel free to search for other recipes that might work better for you!
Now, let me show you how to make these adorable, vegan pumpkin-shaped gnocchi!
Let’s dive into the recipe!
Ingredients:
Serves: approximately 24 gnocchi
For the Gnocchi
3 medium potatoes (boiled and mashed)
1 medium sweet potato (boiled and mashed)
1/4 tsp nutmeg
1 1/2 cups of all-purpose flour (more if needed)
A pinch of salt
Pumpkin seeds (for the stems)
For the Pan (optional):
2 tbsp vegan butter
Fresh sage leaves
Fresh oregano
Instructions:
Prepare the dough: Start by combining the mashed potato and sweet potato in a bowl. Add the flour, nutmeg, and a pinch of salt. Knead the mixture until it forms a smooth dough, adding a bit more flour if needed to prevent it from sticking.
Shape the gnocchi: Divide the dough into two pieces. Roll each piece into a rope/sausage shape about 2 cm (ca. 3/4 inch) thick. Cut the dough into small 3 cm (ca. 1.2 inches) portions and roll each piece into a ball.
Create the pumpkin shape: To give the gnocchi their signature pumpkin look, take some cotton yarn and press it gently onto each ball four times, making eight indentations. This will give your gnocchi the adorable pumpkin ridges.
Cook the gnocchi: Bring a large pot of water to a boil. Drop the gnocchi into the boiling water, cooking them until they float to the surface (just like regular gnocchi). This might take about 3-5 minutes.
Sauté with herbs (optional): In a hot pan, melt some vegan butter and toss in the fresh sage and oregano. Add the cooked gnocchi to the pan, giving them a slightly golden-brown finish.
Completing the pumpkin look: Garnish each gnocchi with a pumpkin seed to serve as the "stem."
Serve with sauce (or keep it simple): You can serve these straight from the pan, or, as I did, pair them with a comforting thick vegetable curry. They’re also delicious with any creamy vegan sauce of your choice and even with pumpkin soup.
