🌲 A Healthy Christmas Recipe 🌲
Ingredients
For the Balls:
½ cup dates
½ cup mixed nuts
⅓ cup almonds (I used blanched almonds I had at home)
2 tbsp cocoa powder
⅓ cup peanut butter
To Garnish:
Pistachios, chopped
Freeze-dried cranberries, chopped
Instructions
Blend the Base:
In a food processor*, blend the dates, mixed nuts, almonds, cocoa powder, and peanut butter until you achieve a sticky, cohesive mixture. If the texture feels too dry, add a small splash of water, a 1/4 tbsp coconut oil, orange juice or more peanut butter.
*For the fictional video, I used a mortar and pestle and finely chopped the dates, but using a food processor gives a better result.
Shape into Balls:
Scoop out portions of the mixture and roll them into bite-sized balls using your hands.
Garnish:
Roll each ball in a mix of chopped pistachios and freeze-dried cranberries for a festive touch. You can use other nuts or dried fruit if preferred.
Chill and Serve:
Place the balls in the fridge for at least 20-30 minutes to set. Serve and enjoy!
These energy balls are the perfect treat for sharing or keeping in the fridge for a quick pick-me-up while slowing down with a cup of tea or watching your favourite Christmas movies.
