Cosy Christmas Baking & Brambly Hedge Winter Story | Exclusive Video

Cosy Christmas Baking

Hello, dear friends!

To celebrate the winter solstice, I’m thrilled to share my latest exclusive video on Patreon—a celebration of all things cosy and wintry. You can find the Cosy Christmas Baking Recipes featured below.

In this special video, I read "Winter Story" from Brably Hedge by Jim Barklem and bake a cute little house-shaped pie filled with wild berry jam and topped with powdered sugar.

This is the last video of the year and I put extra love into it! Thank you to all my Patreon friends for your support and friendship this year!

Cosy Christmas Baking

This recipe is a perfect fit for the Christmas season, bringing warmth and charm to your holiday table. The house-shaped pie, with its golden crust and sweet wild berry filling, feels like something straight out of a storybook, making it a delightful centrepiece for tea gatherings, as a dessert or a cosy moment for self-love. The subtle dusting of powdered sugar adds a touch of winter magic, while the accompanying winter punch, with its fragrant spices and citrusy notes, creates a cosy atmosphere.

Whether shared with loved ones or enjoyed in a quiet moment by yourself, this combination captures the essence of the holidays—simple, heartfelt, and full of cheer.

Pie Crust Recipe

The pie crust is one I’ve shared before, but this time, I left out the sugar to let the jam shine. If you'd like to try it yourself, here’s the simple recipe:

Ingredients:

  • 1 ½ cups of flour

  • 1 teaspoon of baking powder

  • ¼ cup of oil

  • ½ cup of warm water

  • 80 grams jam

Instructions:

  • Prepare the Pie Crust:

    • In a large bowl, mix 1 ½ cups of flour, 1 teaspoon of baking powder, ¼ cup of oil, and ½ cup of warm water.

    • Knead gently until the dough comes together, forming a smooth ball. Let it rest for 10-15 minutes.

  • Shape the Pie:

    • Preheat your oven to 180°C (350°F).

    • Roll out the dough on a floured surface to about ½ cm thickness. Cut out house-shaped pieces using a template or freehand. You will need a front, back, and extra dough for the "snow on the roof", windows, door and decorations.

    • Transfer the back piece to a baking sheet lined with parchment paper.

  • Fill and Assemble:

    • Spread wild berry jam onto the back piece, leaving the edges clean for assembly.

    • Carefully stack the front piece and press the edges together. Use the leftover dough to add decorative details.

  • Bake and Garnish:

    • Bake for 20-25 minutes or until the crust is slightly golden.

    • Let the pie cool slightly, then dust it with powdered sugar for a snowy effect.

Winter Punch

And what’s a cosy day without a warm drink? I also made a delightful winter punch with equal parts water and grape juice, a cinnamon stick, a few cloves, and half an orange sliced into rings.

It’s simple, delicious, and perfect for sipping with a book.

  • Combine Ingredients:

    • In a medium pot, mix equal parts water and grape juice (I used around 300ml of each, adjust quantity depending on your serving size).

    • Add 1 cinnamon stick, a few cloves, and half an orange sliced into rounds.

  • Simmer:

    • Heat the mixture over medium-low heat until it begins to simmer. Avoid boiling to preserve the flavours.

  • Serve:

    • Ladle the punch into mugs or heatproof glasses. Garnish with a slice of orange or a cinnamon stick for an extra festive touch.
