Cinnamon Cottage Baked Oatmeal Recipe
There’s something magical about the simplicity of baked oatmeal, especially when it’s infused with the flavours of autumn.
As the seasons change, indulging in a warm, hearty dish that fills your kitchen with the scents of autumn is truly comforting. The Cinnamon Cottage Baked Oatmeal recipe is the perfect way to start your day with a cosy, nourishing breakfast, enjoy as dessert, serve for tea time or savour as an evening snack!
Ingredients:
2 cups rolled oats
2 cups plant-based milk (I use vanilla-flavoured soy milk)
2 tsp ground cinnamon
1 tsp vanilla extract (if not using vanilla-flavoured milk)
1-2 apples, cubed (alternatively, use frozen berries, fresh berries, peaches, plums, or any other fruit in season) + extra to garnish the top
⅓ cup walnuts or pecans, chopped
Instructions:
1. Prepare the Oatmeal:
In a medium saucepan, combine the rolled oats, plant-based milk, ground cinnamon, and vanilla extract (if using).
Stir in the cubed apples or your chosen seasonal fruit. You can do this later as well.
Cook over medium heat, stirring occasionally, until the mixture thickens into a porridge-like consistency. This should take about 5-7 minutes.
2. Add the Nuts:
Once the oatmeal has thickened, stir in the chopped walnuts or pecans. This adds a delightful crunch and a nutty flavour that complements the warmth of the cinnamon.
3. Transfer to Baking Dish:
Preheat your oven to 180°C (350°F).
Lightly oil or line a baking dish with parchment paper. Pour the thickened oatmeal mixture into the prepared dish, spreading it evenly.
Add some thin apple slices, walnuts or pecans on top for a beautiful presentation.

4. Bake:
Place the baking dish in the oven and bake for 30-40 minutes, or until the surface is slightly golden and dry to the touch. The oatmeal should be set and hold its shape when cut into slices.
5. Serve and Enjoy:
Once baked, remove the dish from the oven and allow it to cool slightly before serving. This baked oatmeal is perfect when enjoyed warm, paired with a steaming cup of tea, a good book, or a cosy video.
Store any leftovers in the fridge (up to three days).
Try other flavours
This recipe is incredibly versatile, allowing you to customise it with your favourite fruits and nuts. Try it with fresh summer berries for a lighter touch or swap in autumnal fruits like plums or pears for a deeper, richer flavour. Frozen berries work perfectly too. And don’t forget the nuts—they add a satisfying crunch that makes this dish feel indulgent yet wholesome.
